Long bike ride and dessert…

I love long bikerides – and am heading out today on one. Get a map of your local area, and discover the trails near your town. It’s so good to just enjoy the scenery but moving at a slower pace and taking it in, instead of speeding by in a car. For me long means 3 hours (or more). Great for my basic level condition since I am not blasting at full speed the whole time, and good for burning those calories and get my metabolism moving.

Tonight I’ll have one of my favourite desserts, and didn’t want you to feel left out – so here’s the recipe:

Take one apple – take out the core, leaving the apple whole otherwise including the skin! Put the apple in an ovenproof dish, push a little knob of butter to the bottom of the hole in the apple, add some raisins till almost half an inch from the top of the hole, add a tablespoon of honey over the raising, and lastly some cinnamon (to taste, I like a lot) – and finish off with another knob of butter or margarine.

Bake in the oven for 45 mins. at medium temperature (150-175C).  That’s it – eat hot with a scoop of vanilla icecream (after a work-out!) or yoghurt, or cold as a sidedish. I sometimes even stir it through my morning oatmeal, great flavour combination and adds a twist to breakfast!

Low in calories, low in fat (without the icecream that is) and great in taste.
