If you read my blog over the weekend, you can imagine that when I opened the washing machine today and took out my stuff, I found myself spraying sand all over the place. After my great, fun, brilliant bike ride on Saturday I added a beautiful run through a quiet Sunday morning wood – catching deer at their breakfast. And a hike today to kick off the day… what a way to start the week.
In any case, after all that, I figure it’s treat time!!
Here’s two recipes for treats that are reasonably healthy – which I got courtesy Shape magazine btw.
Alsatian Plum Cake
2 tbsp unsalted butter, melted
1/2 cup almond paste
2 tbsp nonfat sour cream
1 large egg
1teasp vanilla extract
1/4 cup all-purpose flour
4 tbsp evaporated cane juice
3 plums, halved (don’t forget to take the stones out!)
2 tbsp brown sugar
CALORIES: 170 per cake! 7g fat, 3 g saturated fat, 24 g carbs, 3 g protein
Spray some ramekins or small oven dishes with cooking spray or lightly oil. Mix butter, almond paste and sour cream. Stir in egg/vanilla extract. Then gradually add flour and evap. cane juice. Scoop 3 tablespoons of the mix into each ramekin. Plae a plum half in centre of the batter, cut side up and top with 1 tbsp brown sugar. Bake for 30-35 mins. on 350 F. or until plum is softand toothpick when inserted comes out nice and clean.
Raspberry-Chocolate Angel Food Cake
1/3 cup cocoa powder
3/4 cup all purpose flour
1 1/2 cup plus 1/4 cup evaporated cane juice (any good health store) in separate entities
1/4 teaspoon salt
12 egg whites
1 teaspoon cream of tartar
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
4 cups fresh/frozen raspberries
Preheat oven to 325 F. Spray a 9-inch tube with cooking spray or lightly oil
Whisk together cocoa powder, flour, 1/2 cup evaporated cane juice and salt. In a large bowl, beat egg whites and cream of tartar until very flrothy. Fold 1 cup evap. cane juice, extracts and flour mixture in with metal spoon.
Pour into tin. Bake for 40/50 mins. until firm and a toothpick comes out clean.
Clean raspberries, mix in a little sugar. Serve slice of cake topped with raspberries, and a little whipped cream….
