Eggs…what else?

It’s Easter – so the association with eggs wasn’t terribly hard to make… whether you are hunting for them, painting them, throwing them at unsuspecting friends, it’s all good – as long as you eat some as well.

Eggs are one of those foods that appear on every nutrition guru’s list of wonderfoods – be it Dr. Atkins, Dr. Elson Haas, George Mateljan (see his book The World’s Healthiest Foods, easy recipes!) or Dr. Phil (joking!) – they all have eggs listed. And not without reason, provided you make sure it’s cooked well to prevent salmonella, you can turn it into a great dish, or use it in baking etc. But most important of course is the fact that it is chock full of nutritional goodies and protein.

Make sure you do eat 2 eggs minimum a week, preferably with the yolk. Whilst that yolk contains the cholesterol and yes, you don’t want to overdo it on that, it’s also where all the Vit. A, D, K, E (100% of your daily requirement!), B6, B12 and Folate (almost 100%) and most of what you need in a day of all the minerals and base metals such as copper, manganese, selenium, magnesium, calcium, zinc etc. are stored… so instead of taking a whopping big, expensive supplement – ONE egg, will get you a long way!

At which point, I will rest my case, and for once will opt for the fake, wonderfully rich and smooth chocolate variety … it’s Easter after all.
